Caroline Potter was diagnosed with type 1 diabetes at the age of 20, but that didn’t stop her from enjoying cooking. Colorful Eats is a true visual feast, full of tantalizing photos of some truly amazing diabetes-friendly recipes.

We would love to eat their Chipotle Roasted Acorn Squash with Prosciutto and Pomegranates. The name of the recipe may seem offensive, but it’s actually easy to put together, not to mention gorgeous looking.

3. Diabetic Food

If you like to cook from scratch, Diabetic Foodie is for you. Shelby Kinnaird was diagnosed with type 2 diabetes in 1999, and she made sure her prescriptions followed the American Diabetes Association guidelines. She avoids processed ingredients and artificial sweeteners, opts for locally sourced fruits and vegetables, and works to keep each meal under 400 calories.

Many of their recipes are gluten-free, paleo and vegan, or can be modified to do so. A perfect example of Shelby’s penchant for flavor and creativity is her pineapple black bean salsa, where she says “the roast pork tenderloin really shines.”

Diabetic Food Magazine has been providing tips and information on cooking for people with diabetes since 1995 and now has an extensive library of diabetes-friendly foods. From holiday recipes to regional and ethnic dishes, you’ll always find what you’re looking for.

It’s hard to pick a favorite from the many competitors, but we’re intrigued by one of their recent recipes, Ginger Lemongrass Turkey Sliders. They’re served on lettuce leaves to cut carbs and are stuffed with incredibly tasty ingredients

6. Blessed are diabetics!

Kathy Sheehan has had type 2 diabetes for over 16 years. When you consider the plethora of blog posts and recipes about Diabetic Joy, her experience in the kitchen definitely shows!

We love that their desserts range from subtly complex to ridiculously simple, like this one-minute chocolate cupcake, which uses nut butter instead of non-wheat flours like almond flour to ensure the end product is perfectly moist rather than grainy and dry .

7. Geeta’s Kitchen

If you’re in dire need of a curry, pasta or chutney and want it good for your diabetes, Gita’s Kitchen is a treasure trove. The author behind it, Gita Jaishankar, combines traditional flavors and techniques with common sense for people with diabetes.

There are many traditional dishes to choose from, but this Channa Masala is our top pick. It differs from regular Channa Masala in the use of coriander to get the light green color. According to Gita, taking pictures of the dish was difficult because most of the food “was eaten by my husband and I before I had a chance.”

8. My stylish kitchen

Beth Veltini or Biz has the ability to share nutrition considerations for people with type 2 diabetes as she has type 2 diabetes herself. In My Bizzy Kitchen, she combines a thoughtful (and humorous!) personal style with some seriously delicious recipes.

When it comes to the quantity and variety of recipes, you won’t find a shortage here. Biz has recipes for diabetes, from BBQ ribs to cauliflower macaroni and cheese to pistachio ice cream. One of our favorites is their Sweet Potato and Black Bean Chili. With a can of chipotle peppers, this savory meal hits the “perfect balance of sweet and spicy,” according to Biz

Mike and Jessica Apple are a married couple who both have type 1 diabetes. A Sweet Life is her online magazine that provides tips, news, and recipes that can help other people with diabetes manage their condition and lead an overall healthy lifestyle. They also include curated recipes from other authors and chefs, often paired with tantalizing photos.

One recipe we couldn’t get enough of was their Lemon Ricotta Pancakes. Pancakes are one food many diabetics tend to avoid, but this version uses sugar substitutes, almond flour, and coconut flour to lower the effects of blood sugar. To ensure smooth pancake batter, your mixer is your best friend.
